The Perfect Bacon Egg and Cheese

Ingredients

  • The bread. Preferably something light and fluffy like a brioche bun.
  • 2 slices thick cut, uncured bacon.
  • 1 slice white American cheese.
  • 1 large egg.
  • Salt and pepper.
  • Butter.

Method

  • Cook the bacon. This is the longest step so it is always best to start here. I recommend the frying pan when making a few pieces. When cooking for the masses, lay it out on a baking sheet with parchment paper and put in the oven at 350 deg F for 20-30 minutes. Check after 20 minutes and then observe until cooked how you like it, I recommend well done.

  • Prep the bread. Cut the roll in half and butter both sides until covered. Place face down in the pan while it heats up. Cook until both pieces are golden brown but not black. Set to the side, leave the burner and pan on.

  • Cook the egg. Drop a chunk of butter in the warm pan and let it melt. When the butter starts to sizzle, break an egg and drop it into the pan where the butter is. Use a fork or spatula to break the yolk, poking it from a few directions so it moves to all sides of the egg.

  • Season. Apply salt and pepper generously while the egg starts to cook on the preheated pan.

  • The flip. When the edges of the egg start to cook through, possibly turning a little golden brown and curling, use a spatula to flip the egg. This is usually about 60 to 90 seconds if the pan is medium - hot when you start.

  • Cheese it up. Drop the cheese onto the egg shortly after flipping it, at most 30 seconds after the flip.

  • Assemble it. After the second side has cooked for 60-90 seconds, and the cheese is melted, remove the egg from the pan and place on the bun. Add bacon, any sauces, and top it.

  • The final cut. Press down on the top of the sandwich and cut in half. If the egg is cooked correctly, the yolk should slowly drip down from the center and barely make it to the plate.
