
Ingredients
- 1c basmati rice
- 1 3/4c water
- Salt
- Butter or oil
- 1# dried black beans or 4 cans cooked black beans
- Lots and lots of finely diced yellow onion
- About a 1” section of 1” diameter ginger, peeled and very finely chopped
- Oil for sauteing onion
- 1 bunch cilantro chopped
- Salt, pepper and ground cumin
Method

In pot you will prepare rice in, melt butter or heat oil then lightly toast the rice.

When fragrant, add water and salt and bring to a boil.

Reduce heat and simmer, covered, for 20 minutes.

Remove from heat and let stand for 5 minutes.

Fluff with fork and serve.

Soak and cook beans per package directions or drain canned beans.

Saute onion in olive oil over low, slow heat until very soft. Add ginger after about 10 minutes.

In separate pot, add beans, water to cover, onions and ginger, salt, pepper and cumin.

Bring to a boil and cook over low heat for 3 or more hours.

When beans are done, add cilantro and cook 10 minutes more.
