
Ingredients
- 2 lb Branzino, ask the store to ‘butterfly’ it for prep
- Lemon
- Olive Oil
- Capers
- Castelvetrano Olives
- Fresh Thyme
- Salt and Pepper
- Recommended Sides: Greek Salad, Roasted Potatoes
Method

Heat the oven to 350 F

Place parchment paper on baking sheet

Lay the branzino down the center of the parchment

Drizzle good olive oil, salt, and pepper over the fish

Sprinkle olives and capers on top of and around the fish

Pull the leaves off the thyme sprigs and sprinkle over the fish

Slice your lemon and lay the slices down the center of the branzino

Bake for 15-20 minutes until tender, it should easily separate when you comb it with a fork
