Ingredients

  • 2 lb Branzino, ask the store to ‘butterfly’ it for prep
  • Lemon
  • Olive Oil
  • Capers
  • Castelvetrano Olives
  • Fresh Thyme
  • Salt and Pepper
  • Recommended Sides: Greek Salad, Roasted Potatoes

Method

  • Heat the oven to 350 F

  • Place parchment paper on baking sheet

  • Lay the branzino down the center of the parchment

  • Drizzle good olive oil, salt, and pepper over the fish

  • Sprinkle olives and capers on top of and around the fish

  • Pull the leaves off the thyme sprigs and sprinkle over the fish

  • Slice your lemon and lay the slices down the center of the branzino

  • Bake for 15-20 minutes until tender, it should easily separate when you comb it with a fork
