Ingredients

  • 2# ground beef (typically 80%)
  • 2c cooked rice
  • 2 eggs
  • 3 onions, chopped
  • 3” square fat back, chopped (salt pork may be substituted)
  • 1 large head cabbage (should feel heavy)
  • Canned condensed tomato soup
  • Salt and pepper to taste

Method

  • Saute fat back and, when starting to brown, add onions and cook until tender.

  • Mix meat, rice, eggs, salt, pepper and about ⅔ of onion mixture.

  • Remove core of cabbage. Steam whole head in a small amount of water until leaves peel away easily.

  • Sprinkle salt inside a leaf, place a spoonful of meat mixture near the base and roll up.

  • Place rolls in baking pan (preferably one with cover. If no cover, use foil in step 8).

  • Dilute soup with a small amount of water and pour over glambki in pan.

  • Spread remaining onion mixture on top. (Babci then scattered strips of the cabbage core over this.)

  • Cover and bake at 325F for 2-3 hours. If you prefer the top browned, uncover for the last ½ hour.
