Dairy-Free-Healthy-Chicken-Pot-Pie

Ingredients

  1. 6c shredded chicken (from oven baked chicken breasts on bone, shredded oven roaster or cryovaced package from Costco.
  2. 1c finely chopped carrot
  3. 1c finely chopped celery
  4. 1c finely chopped yellow onion
  5. Salt and pepper to taste
  6. 4T butter
  7. 2c heavy cream
  8. Frozen puff pastry sheets

Method

  • Saute chopped vegetables in butter over slow and low heat until soft.

  • Add salt, pepper and heavy cream and heat through.

  • Add chicken and stir to combine.

  • Bake puff pastry dough sheets as directed by packing. It helps to brown pastry by brushing surface with beaten egg wash.

  • Pour chicken mixture into baking pan and keep warm in oven until ready to use.

  • To serve, place baked pastry sheets on top of baking pan. Alternatively, the chicken mixture can be spooned into bowls or onto plates and topped with appropriately sized pieces of pastry.

    Some like to add white wine or maybe cognac to the creamy chicken mixture.
