
Ingredients
- 3x slices thick-cut, smoked or unsmoked bacon (preferably from Daily Provisions (iykyk))
- 1x heirloom tomatoes (in summer season, in winter use smaller vine tomatoes)
- 2x slices sourdough bread - toasted
- 3x pieces of butter lettuce
- Spoonful of extra-virgin olive oil
- Spoonful of spicy mayo (preferably Sir Kensingtons)
- Flaky sea salt
- Ground black pepper
Method

Put bacon slices on a parchment lined oven sheet and cook until crispy - this is the easiest way to cook bacon!
- 375 degrees for 10-15 mins should do it.
- If you have a toaster oven this will likely be quicker.

While bacon cooks, slice tomato into thin rounds
- They key to this recipe is marinating the tomato slices in olive oil, salt and pepper (at least for 10 minutes)

Spread mayo on toast

Add the cooked bacon, tomatoes and butter lettuce to the bread

Squeeze to close, cut in half horizontally (iykyk)
