
Ingredients
- 2# ricotta cheese
- ½# mozzarella shredded
- 2 eggs
- 3/4c grated cheese
- 1T chopped parsley
- 6 eggs
- 1 1/2c flour
- 1 1/2c water
- Salt and pepper
- Oil to coat pan
- Marinara sauce and extra grated cheese for serving.
Method

Combine first 5 ingredients until very well mixed to make filling.

Combine remaining 5 ingredients to make shell batter.

Coat a small teflon lined pan or crepe pan with oil.

Add batter and prepare approximately 23 crepes, one at a time.

Spread a dollop of filling mixture down center of each crepe.

Roll up each crepe and place in baking dish, seam side down.

Top with marinara sauce and bake in 325F oven until heated through.
