Ranch Slaw

Ingredients

  • ½ small head green cabbage (about 12 oz)
  • 2 Persian cucumbers
  • 4 oz sugar snap peas
  • ½ cup ranch dressing
  • 2 small carrots
  • 2 scallions
  • 1 bunch of radishes
  • Fresh dill

Method

  • Core and thinly slice the green cabbage.

  • Cut the cucumber into matchsticks.

  • Thinly slice the sugar snap peas.

  • Toss the cabbage, cucumber, and snap peas with ½ cup ranch dressing to coat.

  • Thinly slice the scallions on a bias.

  • Cut the radishes into matchsticks.

  • Then toss the mixture with the scallions and radishes.

  • Serve sprinkled with chopped fresh dill if desired.
